Startup disks - to change startup disks without restarting your Mac - open up the System folder on the new disk, hold down the OPTION and COMMAND keys while double-clicking on the Finder.  When you return to the Finder, drag the former startup disk into the trash.  (This will also work for a hard disk as long as it is self booting.)
